Your questions.

Must all data be centralised?

Not necessarily. Some information can stay in its original tool. The aim is to define coherent references and exchanges based on the identified uses and constraints.

Does hosting alone describe data processing?

No. An application may call other services. We distinguish its hosting location from the destinations of transmitted data, particularly where a model provider is involved.

Can we change only part of the existing environment?

Yes, if the assessment supports it. A connection, component or permissions can be adjusted without rebuilding everything. Effects on other tools still need to be examined.
